Spinach, Bacon, & everything Fritatta

Cooking Steps

Turn on the broiler to preheat. Over a medium flame saute onions & red chile pepper with the EVOO. Cook the onions but keep a little firm. Add your spinach, oregano, salt & pepper & bacon (keep some extra for the topping). Whisk the eggs & milk in a large bowl. Once the spinach has wilted through, add the tomatoes & beaten eggs. Continue to cook it on the stove top, put a lid on but leave it open a little. Once the egg has cooked through (a little runny in the middle) sprinkle the cheese & bacon on top. Put the whole pan in the broiler for about 5-8 min. Once the cheese has browned a litte you are ready to serve.

Ingredients

  • 10 Beaten Eggs
  • 1/2 C of chopped onion
  • 1 Red Chile Pepper diced
  • Dash of Oregano, Salt & Pepper
  • 12 Strips of Bacon (cooked & chopped)
  • 1 C of Cheddar Cheese
  • 4 fist full of Fresh Spinach
  • 2 Tbsp of EVOO
  • 1/2 C of Grassfed Milk or coconut milk
  • 1/2 C of Yellow Grape Tomatoes
