Sweet and Sour Pineapple Chicken

Cooking Steps

Brown chicken in coconut oil then set aside.
Saute onion and bell pepper still tender
In a separate bowl mix the vinegar, arrowroot powder, pineapple juice and honey.
Combine the chicken, pineapple and bell peppers into the same pan. Add the chicken stock and let boil. Stir in the vinegar, arrowroot mixture and cook for 3 minutes.

I love the sweet and sour taste of this dish. Sometimes in life the oddest combination of things give us great pleasure.

Ingredients

  • 2 Chicken Breasts cubed
  • 1 onion sliced
  • 1 green and red bell pepper sliced
  • 1/2 cup honey
  • 4 tablespoons arrowroot powder
  • 1/2 cup organic chicken stock
  • 1/2 cup apple cider vinegar
  • 1/2 cup pineapple juice
  • 1/2 cup cubed pineapple
  • 1 Tablespoon coconut oil

    The flavor was great but the sauce on it had the consistency of “snot”.

  3. I do agree with the snot comment. Less honey to vinegar ratio next time for me.

  4. Per the above comments, I used 1/4C honey. Turned out perfectly! I served it over quinoa.

  5. Actually had to use a honey substitute. Also I varied the amounts of ingredients to taste. Turned out yummy!
