Sweet Potato Biscuits
Cooking Steps
1. Preheat the oven to 350 degrees.
2. Whisk the eggs together then add the coconut flour, baking powder and salt.
3. Mash the sweet potato then mix it in with the egg mixture.
4. Cut the palm shortening in with the dough and mix well.
5. Line a baking sheet with parchment paper and place small dollops on it. This should make 9 biscuits.
6. Bake for 12-15 minutes until they are golden brown.

About how many cups was the sweet potato?
It was a small potato, about 3/4 cup.
I just made these and yes make sure the sweet potato is a small one, or the batter will be loose…. like mine were. But the flavor is wonderful, next time I’ll know better. Wish I’d seen the above comment before I started them. These will be a keeper though.
These were great. I had to cook them alittle longer than 15 mintues, but my batter made about 12 biscuits.

Yes, you can use butter instead of the palm shortening.
Can you use coconut oil in place of the palm shortening?
Made these tonight and they were awesome!
I also made these and had to cook longer than it says – twice as long. I used butter instead. These have a great flavor. I sliced and put turkey inside with some cranberry sauce and made little sandwiches.
Add bacon and chives!!! Deeeelish!
