Sweet Potato Fish Cakes
Cooking Steps
Boil the sweet potato in salted water for 20-25 minutes until tender. Drain off the water.
Add in the butter and mayo, season generously with salt and pepper. Mash well until all the lumps are obliterated.
Transfer to a large mixing bowl and stir in the dill, lemon juice and onion.
Flake in the tuna. Don’t over-stir, you want some of the chunks to remain intact.
Shape into patties, chill for 30 minutes then broil or fry until golden on both sides (I stuck mine under the broiler and did them for 10 mins on each side).

What kind of mayo did you use? Could you use Paleo mayo?

Absolutely.
I think paleo mayo would be just fine. It’s all I ever use.
I loved these, but mine did not look at all like the pic. I cooked some on the stove top and broiled others as the recipe states but they were very sticky. Any advice? Thanks.

These tasted good. But where mushy. I think I will bake my sweet potato next time and add an egg to help hold it together.
Thank you! I didn’t have mayo, so added an egg, some vinegar, some evoo, and some coconut flour even though I didn’t need to. I used Carnival squash instead.
I would not make again very mushy I followed directions and even added almond meal to help bind but was not enough.
I need to add the ratio tuna to sweet potatoe is. Off. Sweet potatoe is what’s making it mushy.
