Sweet Potato Leek Soup
3 Leeks, chopped and washed well (white part only)
1 medium sized onion, chopped
2 tbsp extra virgin olive oil
3-4 garlic cloves, minced
1/2 tsp cumin
2 sweet potatoes, peeled and diced
4 cups vegetable broth
1 can coconut milk
salt and pepper to taste
Sautee onions and leeks in a large pot with extra virgin olive oil for about 10 mins. Add garlic and cumin and continue to sautee for another minute.
Add sweet potatoes, and vegetable broth and bring to a boil.
When sweet potatoes have become soft, carefully add contents to a food processor, add coconut milk and process until smooth. You can also use a hand immersion blender if you have one!
