Ummy Yummy Grilled Artichokes
First cut raw artichokes in half. Take a knife and clean out the artichoke. If you are unfamiliar here is the link to a good video http://www.youtube.com/watch?v=IowL0pnig1Y just ignore how they fill it with bread crumbs in the end.
Once cleaned out, cut the artichoke in half then put into boiling water bath for about 30 minutes.
While the artichokes are boiling, prepare the marinade by taking the other ingredients and whisking them all together. You can adjust any of the ingredients to taste. I find that if I have more than 2 artichokes I have to double the marinade to fully cover the chokes. I don’t mind….the marinade is super duper yummy!
Once the artichokes are finished cooking, take them out and put then in a dish sufficient to cover them in marinade. I like to marinate mine over night. You can do it in an hour or so as well.
Once marinated, heat up your grill and put them face down on the grill for about five minutes. Pull off grill and eat those yummy leaves! If you’ve never had an artichoke – the bottom portion of the leaves is the yummy goodness. Clean that off with your teeth. When you get to the center – you can eat the heart. It’s the best part.
If you have left over marinade – use it for dipping! Sooooo much yummier than traditional butter or mayonnaise dip! Let me know if you like it! Sorry the picture is not so good. I had a plate of four….but we got hungry. ;D
