Blueberry banana protein muffins

In food processor mix together flour, protein powder, salt, baking soda, baking powder and flax seed. Set aside.

In large mixing bowl, whisk eggs, banana, oil and honey.

Whisk dry ingredients into wet ingredients.

Add blueberries.

Fill 12 muffin tins 3/4 of the way full.

Bake in 350 degree oven for 25-30 mins.

  • 1 banana (mashed)
  • 6 eggs
  • 1/2 cup coconut oil (melted)
  • 1/4 cup honey
  • 1/2 cup almond flour or coconut flour
  • 1/4 cup vanilla protein powder of choice (I use vanilla)
  • 2 tbs chia seeds
  • 1/2 tsp salt
  • 1/4 tsp baking soda & 1/4 tsp baking powder
  • 1 cup blueberries (fresh or frozen)
