Carrot, Pistachio and Cranberry Slaw

1.Put shredded carrots, chopped cilantro, and pistachios in a medium sized bowl.
2.Drizzle with the 3 TBS olive oil, and lemon juice. Add sea salt and black pepper. Toss to mix.

  • 2 TBS cranberries, dried, and apple juice sweetened
  • 2 TBS pistachios, shelled and chopped

  • 1 TBS fresh lemon juice
  • 1/4 t sea salt
  • 1/4 t fresh ground black pepper
