Cashew cheese/cream

Soak your cashews in water over night, or about 10 hours.

Rinse and drain your cashews, then add all ingredients to your Vitamix (or other high speed blender) and blend until smooth.

  • 1/2 cup + 2 tablespoons water
  • 1.5 teaspoons nutritional yeast
  • 3/4 teaspoons salt
  • 1 tablespoon lemon juice
  • A little less than 1/4 teaspoon garlic
  • Optional-1.5 teaspoons xanthan gum
