Chocolate and Vanilla Cake Pops

Check out these Paleo no-bake cake pops! I know you can’t resist that! I got this idea a couple of months ago when a friend told me about cake pops that she gets from Starbucks for her kid on special occasions. I thought, I can make that! And so I did for my kiddo’s first day of preschool. Enjoy!

  • Ingredients for chocolate cake pops: 1 Tbs melted coconut oil, 1/2 Tbs pure maple syrup, 1 Tbs unsweetened cocoa powder, 6 Tbs almond flour, Dash of salt
  • Ingredients for the chocolate sauce: 1 Tbs melted coconut oil, 1/2 Tbs pure maple syrup, 2 Tbs unsweetened cocoa powder
  • Ingredients for the vanilla cake pops: 1 Tbs melted coconut oil, 1/2 Tbs pure maple syrup, 2 Tsp vanilla, 8 Tbs almond flour, Dash of salt
  • Mix the wet ingredients for the cake pops first. Make the vanilla and chocolate in separate bowls, of course!
  • Then add the dry ingredients to the wet ingredients and mix well. Note for the chocolate cake pops mix the cocoa powder first, then add the almond flour and salt.
  • Roll into one inch balls and freeze on parchment paper for 15 minutes.
  • Make the chocolate sauce wile you are waiting, adding the wet ingredients first, then the cocoa powder.
  • Take the cake pops out of the freezer, put the sticks in and roll through the chocolate sauce.
  • Place in a glass jar or mug and refrigerate until you are ready to eat them.
