Chow Fun w/pigskin noodle

A Paleo twist to a Traditional Chinese dish

  • 1lb pigskin fat removed and sliced into 1in wide pieces
  • 1/4c kosher salt
  • 8oz pork shoulder jjulienned
  • 4 cloves garlic chopped
  • 1 tbsp fish sauce
  • 1 tbsp coconut aminos
  • 2 tbsp sriracha
  • 1 tbsp salt
  • 2 tbsp potato starch
  • 1/2 tbsp black pepper
  • 2 tbsp lard
  • 10 green onios
  • 1 tbsp ginger minced
  • 1 cup carrot 2in match stick pieces
  • 1/2 cup celery sliced
  • Add skin, salt and water to cover to stock pot and simmer 1.5hrs or until tender
  • Combine pork, garlic, fish sauce, coconut aminos, sriracha, salt/pepper and potato starch. Mix well and let marinate while skin is simmering
  • Drain skin and set aside
  • Add 1tbsp lard to wok and cook pork shoulder quickly over medium high heat.
  • Remove pork from pan
  • Add 1 tbsp lard, ginger and vegetables, cook quickly
  • Add skin and pork cook until heated through
