Coconut Breakfast Waffles

Heat up a waffle iron (or small frying pan if making pancakes).
Whip all the ingredients together to a smooth, lump free, batter (I suggest using a hand mixer).
Grease the hot waffle iron/frying pan with butter or coconut oil, add a bit of batter and fry until done…repeat until you’re out of batter.
Serve with fresh berries, eat and enjoy, and then go out and have an awesome day!

  • 2 (to 3) Eggs.
  • 2/5 cup (about 7 tbsp) cream.
  • 1 1/2 tbsp coconut flour.
  • 1/4 tsp vanilla powder (ie. 100% ground vanilla beans, no additives!).
  • (A bit of butter or coconut oil for frying.)
