Coconut Fried Chicken

~ In a bowl add the coconut flour, Salt & Pepper, & Paprika. Mix together ingredients with hands.

~ Sprinkle the coconut flakes on a plate.

~ in a bowl whisk together eggs to make an egg wash.

~ Heat up a pan over low-medium heat with Extra Virgin Olive Oil.

~ Dip chicken in egg wash, dip chicken in coconut flour mix, roll chicken in the coconut flakes. Put chicken in heated pan with the EVOO.

~ Cook for 10 min per side, until cooked all the way through or golden brown.

***This was very sweet for me. Next time I think I will add some curry powder or maybe some cayenne pepper. I like my food spicy 🙂

  • Unsweetened Coconut Flakes
  • Coconut Flour
  • Egg wash (scrambled eggs)
  • Paprika
