Coconut Peach Bars

In a bowl combine all ingredients.
Line a pan with parchment paper and dump the mixed up coconut into it. Press the mixture down into the pan and into all corners.
Place in freezer for at least 1 hour, 2 or more is better. Remove from Freezer, lift out parchment paper, and chop them into 8 rectangular bars.
To transport: wrap individually in saran wrap and store in fridge or freezer.

  • 2 cups unsweetened coconut flakes
  • 1/2 cup dried peaches, chopped
  • 1/4 c melted coconut oil
  • 2 tbsp maple syrup
