Heat skillet over medium heat. Place all ingredients in a medium bowl and mix well with hand mixers or mash well with a fork. (It\’s ok to have a few little banana chunks.) Pour 2-3 tablespoons of batter onto hot skillet and cook for about 1 minute. Flip and repeat.
Please note: unlike regular pancakes, these don\’t bubble around the edges when you should flip them so you have to watch carefully so they don\’t burn!
