Fluffy Chestnut Flour Pancakes

These fluffy pancakes are made with chestnut flour, which gives them a sweet, nutty flavor.

Ingredients
  • 4 large eggs
  • 1/4 cup canned full-fat coconut milk
  • 3/4 cup chestnut flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon sea salt
  • 2 teaspoons baking powder
  • 1 teaspoon apple cider vinegar
  • Coconut oil for griddle
Directions
  • In a large bowl, whisk the eggs.
  • Add in the coconut milk and mix well.
  • Whisk in the chestnut flour, coconut flour, and sea salt. (Chestnut flour can be lumpy; mix with gusto.)
  • Stir in baking powder and apple cider vinegar.
  • Let sit for 5 minutes to thicken.
  • Grease a hot griddle with some a bit of coconut oil.
  • Pour the batter onto the griddle by 1/4 cupfuls.
  • Cook until bubbles form in the batter and pop, and the edges look dry.
  • Flip and cook until lightly browned on the other side.
  • Enjoy with your favorite pancake toppings! (I recommend maple syrup and butter...yum.)
