Meatball and Zucchini Skillet

  • Meatball and Zucchini Skillet: 2 Small Yellow Squash, quartered 2 Small Zucchinis, quartered 2 Red Peppers and two Yellow Peppers , roast them in the oven them cut into strips 1 Medium Yellow Onion, cut into strips 2 Cans of Muer Glen Roasted Tomatoes Mrs Dashes Italian Seasoning 1 clove of Garlic
  • Meatballs Ingredients: 2lbs of Grass~Fed Beef 1 whole Leek, cleaned and diced 1 Tbsp of Worcestershire Sauce 1/2 cup of GF Panko Crumbs 1 Egg 2 Tbsp of Roasted Garlic 1/4 cup Fresh Parsley, minced
  • Put all the ingredients in a bowl, mix well. Form into bite size balls and bake at 350 for 15 minutes. Once cooked set aside.
  • In a large Skillet saute your onions, peppers, zucchini, and squash. Add the garlic and stir, cook for 3 minutes or until the squash is tender. Add the tomatoes, seasoning and the meatballs set simmer for 15 minutes. I served this over garlic spaghetti squash.
