Mediterranean Chicken Pizza

Filet 2 chicken breasts and place between 2 sheets of parchment paper. Pound until about 1/4 inch thick. Broil flattened chicken breasts 1.5 minutes on each side. Turn oven down to 400*F, then top chicken breasts with diced tomatoes, artichokes, sun-dried tomatoes, jamon serrano, olives and lastly fresh mozzarella slices. Bake about 20 minutes or until cheese is slightly browned.
