Melon Salad with Honey Mint Dressing

Chop honeydew into bite sized chunks. Place in a bowl and set aside. Using a blender or magic bullet, blend honey, water, mint and 1/3 cup honeydew until smooth. This will have a thin liquid consistency. Pour dressing over honeydew and toss to coat well. Eat! This dish makes a very nice presentation when garnished with a mint leaf.
