Orange Coconut Chicken

– Heat the coconut oil in a skillet or work and fry the onions until translucent.
– Add the diced chicken, along with the cinnamon, coriander and garlic and stir well. Cook over medium heat, occasionally stirring, until browned and cooked through.
– While the chicken is cooking, dissolve the creamed coconut in the orange juice in a saucepan over low heat. The mixture will become quite thick.
– When the chicken is done, stir in the orange coconut sauce, orange zest and cilantro. Add salt and pepper to taste.
– Feel free to add a small amount of water (or more orange juice if you\’ve got any) to the dish if you feel it\’s too thick.
– Serve hot, and enjoy!

  • zest and juice of 2 oranges
  • 100g creamed coconut (a little over 1/4 cup)
  • salt and pepper to taste
  • 1/4 cup chopped cilantro
  • 1 tbsp coconut oil
