Paleo Breakfast Cookies

Ingredients
  • 1 c coconut flour
  • 4 eggs
  • 1/4 c almond meal
  • 2 mashed bananas
  • 1/4 c shredded coconut
  • 1/2 c coconut oil
  • 1/2 t baking soda
  • 1 t vanilla
  • 1 t cinnamon
  • 1/4 t nutmeg
  • 1/4 t salt
  • 1/4 c raisins
  • 1/4 c pepitas
Directions
  • Mix together the coconut flour, eggs, baking soda, bananas, coconut, almond meal, coconut oil, vanilla, salt, cinnamon, and nutmeg. Stir in the raisins and pepitas. Form little balls of cookies dough and press down onto a prepared cookie sheet so you have flat rounds of your desired size. Bake at 350 degrees for 12-15 mins, until the cookies are slightly browned.
