Paleo Stuffed Peppers

1. Preheat the oven to 400 F
2. Chop the onion and saute in olive or coconut oil until translucent
3. Remove sausage from casings and put in a bowl with the onion, spinach and egg. Mix thoroughly.
4. Cut the peppers in half lengthwise and remove the seeds.
5. Stuff each half pepper with the sausage mixture and place in a glass baking dish stuffed side up.
6. Bake for 40 minutes and enjoy!

  • 1 lb Natural Italian Sausage
  • 3 cups fresh spinach
  • 1 medium onion
  • 1 egg
  • Salt, pepper and garlic powder
