Paleo Sushi

1) Place cauliflower and garlic in food processor until it resembles rice
2) Saute with oil over medium high heat. Add GF soy sauce or coconut aminos and stir until lightly browned
3) Spread about 1/4 cup of cauliflower rice on the end of the nori sheet that is closest to you (about 2inch row)
4) Then layer vegetables, protein of choice, avocado and ajvar across cauliflower
5) Tightly roll up the seaweed, securing the end with water.
6) Cut up sushi and serve!

  • 1 head Cauliflower
  • 6 Nori sheets
  • Sliced vegetables (carrot, onion, cucumber)
  • GF Soy sauce or coconut aminos
  • 1 tsp Olive oil
  • Avocado
  • Chicken, fish or meat
  • Ajvar (pepper/eggplant relish) - optional*
  • 1 clove garlic
