Pig Rib Salad

In a large bowl, layer lettuce vegetables and rib meat. Drizzle with dressing and Sriracha.

I understand that the idea of leftover ribs is sacrilegious, but this salad is a great way to make up for a poor showing the night before.

  • 1/2 rack leftover BBQ pork ribs with meat removed from bones
  • 2-3 tbsp home-made or good quality store-bought ranch-style dressing
  • 1-2 tsp Sriracha hot Thai chili sauce
  • 2-3 cups shredded romaine lettuce
  • Sliced cucumber
  • 1/4 small red onion (thinly sliced)
  • 1 small carrot (shredded)
