Pumpkin Spiced Latte

1. Start by brewing your coffee — I would suggest unflavored.
2. Combine coconut milk, pumpkin, and nectar in a medium saucepan. Cook over medium heat until coconut milk begins to bubble and foam.
3. Remove from heat and add vanilla and spices. Whisk to combine.
4. Fill 2 mugs about 1/2 way up with your coconut milk mixture.
5. Add hot coffee to fill mugs up completely.
6. No need to stir — just sprinkle some cocoa powder on top for a nice look and extra bit of indulgence.

  • 3 tbsp. pure pumpkin puree
  • 1 tbsp. coconut nectar
  • 1.5 tbsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • 1/2 tsp. pumpkin pie spice
  • sprinkle of unsweetened cocoa powder
