Spaghetti Squash with Organic Meat Sauce

Ingredients
- For Sauce: 1lb Organic Grass-fed Ground Beef
- 1/2 - 3/4 Diced Onion
- 4-5 Sliced Button Mushrooms
- 2 Diced fresh tomatoes
- 2 small cans of Organic Tomato Paste
- Garlic (to taste..I use a lot)
- Salt (Optional)
- For Spaghetti Squash: 1 Spaghetti Squasy
- Olive oil or coconut oil
- Salt & Pepper
Directions
- Organic Meat Sauce: Heat a large pot to medium high heat.
- Empty diced onions into pot and cook until they begin to become a bit clear
- Add Ground beef & spices and cook until almost brown
- Now add Tomatoes, Paste, Water (to desired consistency), & Mushrooms
- Simmer on low heat (I normally do this for at least an hour to let the flavor seep in, but you can do less if you are short on time)
- Spaghetti Squash Directions (good bye need for pasta): Preheat oven to 400 degrees
- Cut a medium Spaghetti Squash length wise
- Use a spoon to clean out the center area
- Coat each inner half with oil (olive or coconut) and sprinkle with pepper and (optional salt)
- Place Squash cut side down onto pan and bake for 40-45 minutes
- When done use a fork to scrape out the spaghetti squash
- Mix the two and you have a great tasting alternative to that oh so loved family classic.
