Spooky Ghosts and Eyeballs

A healthy treat for halloween (or any day!)

Ingredients
  • Green Grapes, Frozen (they don’t have to be frozen but it makes it a lot easier to work with the coconut butter. If they aren’t frozen, they should at least be cold.)
  • Enjoy Life chocolate Chips
  • Unsweetened Shredded Coconut
  • Coconut butter
  • Toothpicks
  • Parchment Paper
Directions
  • For the eyeballs:
  • Stick toothpicks in your grapes
  • If your coconut butter isn’t liquid, put it in the microwave for 30 seconds so that it gets nice and liquidy.
  • Dip grapes in coconut butter and set them on parchment paper to dry.
  • Melt about 1/2 cup of chocolate chips either using a double boiler or by putting them in the microwave. I used a microwave because I’m lazy.
  • Once the chocolate is melted, dip the back of a small spoon in the chocolate and put it on the grape, making it look like an iris (the colored part of the eyeball).
  • Wait for the chocolate to harden (by the time I was done with my irises, most of the chocolate was hard enough)
  • Dip a toothpick in coconut butter
  • Put a drop of the coconut butter on the chocolate iris. This is your pupil.
  • For the ghosts:
  • Stick toothpicks in your grapes
  • If your coconut butter isn’t liquid, put it in the microwave for 30 seconds so that it gets nice and liquidy.
  • Dip grapes in coconut butter.
  • As soon as you dip each grape in the coconut, stick two chocolate chips into the coconut butter to make eyeballs for the ghosts. It’s important to do this before the coconut dries so that the chocolate chips stick.
  • As soon as you’re done with the eyes, dip it in your unsweetened coconut flakes.
  • Set them on parchment paper to dry.
