- 1 lg Sweet Potato. .. sliced thin (mandolin slice..1/8 in)
- 2 tbs Butter
- 2 Eggs
- 1/4 tsp Cinnamon
- 1/8 tsp Nutmeg
- Splash of Vanilla
- Beat eggs, cinnamon, nutmeg and vanilla in a small mixing bowl.
Melt butter in large skillet over medium heat.
Dip potato slices into egg mixture and place in skillet. Cook for about 4 minutes per side or until golden and fork tender.
Serve topped with butter and maple syrup.
